3 Cheese Mac N Cheese
Ingredients:
- 1½ cups grated Gruyere
- 1½ cups grated Cheddar
- 1½ cups Brie
- 4 tbsp butter
- 1 tbsp minced shallot
- ¼ cup all purpose flour
- ¾ tsp nutmeg
- 1 tbsp chopped fresh thyme
- 5 cups milk
- 2 cups panko
- 1 tbsp chopped fresh thyme
- 1pound penne
Production
- Mix all cheeses together and reserve 1 cup.
- Heat butter and add shallots and sweat.
- Add flour and nutmeg and stir till golden brown.
- Slowly whisk in milk and simmer till thickened.
- Add cheese and stir till smooth and cheese is melted.
- Cook pasta till al dente, strain, and transfer to large bowl.
- Toss in your cheese sauce and coat generously.
- Place mixture in individual ramekins, sprinkle with remaining cheese, panko, and thyme.
- Bake in oven till heated thru and panko is golden brown.
